Four Helpful Tips for Taking Your Foodservice Operation Outdoors
Summer weather has finally arrived, which means your table service is likely expanding to your outdoor dining patio. At first glance, opening your patio might seem like it only involves giving everything a thorough cleaning; however, there are other factors to consider from the back of house perspective that you need to consider.
Keep Lighter Fare Cool
Hotter weather means lighter fare on your menu, but what affect does this have on your foodservice equipment? Make sure all of your dining areas, especially outdoors, have ways to properly refrigerate menu items for optimal serving temperature and to avoid spoilage. Whether it’s under a bar or near a door, smaller, more mobile refrigeration units should be accessible for patio service.
Take Your Grill Outdoors
Consider moving your grill operation outdoors to maximize food freshness and provide an entertaining, aromatic draw for passersby. Fight Back the Flood
Front and back of house foodservice tend to be top of mind when you start to your patio, but a less-obvious component that can wreak havoc if it’s not functioning properly is drainage. Make sure that your wastewater drainage is unobstructed to prevent stagnant water from pooling, and replace cracked or corroded drain grates and covers.
